But I feel like this book wasn't really sure who its audience was, so it was a little all over the place.

Nancy Singleton Hachisu is a native Californian who has lived with her Japanese farmer husband in Saitama prefecture since 1988. It isn’t as finicky as you might expect, because it reflects a monastic tradition based on simplicity. I am not sure why she chose not to mention this fact, instead just saying "Buddhism in Japan, Japanese Buddhism, etc) but it actually makes the book seem less credible to me.

In The Vegetarian Cookbook, her latest book, Nancy gives the reader a fascinating and comprehensive overview of what it means to be vegetarian in Japan, explaining among other things their deep gratitude for the earth's produce that sustain them and their no-waste approach. The truth is, the book doesn't quite hit the mark in *any* of these categories, but still--it's delicious looking food, with very accessible ingredients (if you live in a big city). First, a couple of core ingredients, like dashi, shoyu, and hon mirin, are absolutely essential to much of Japan’s cuisine, and this book gives fabulous directions on how to make or find them. Though I am far from cooking my way through the book, the recipes I have already made have come out amazing (Creamy Kabocha Soup mmmm!

I’d say that you could easily double the wet ingredients for more impact – which is what I did the second time I made it. Symbols denote which are vegan, dairy-free, or nut-free, and the recipes names also appear in Japanese characters as well as transliterated. Whether you think of this food as vegetarian or temple food, it is Japanese and Nancy Hachisu is a wonderfully knowledgeable guide, offering gentle encouragement at the start of each recipe…I was struck by the smallness of the portions, the beauty of each, and the balance they offer in a meal.or who want the author to hold their hand the whole way refusing to learn the actual Japanese words for ingredients. Like, in many ways it reads like it's supposed to be a coffee table book, but it's notably lacking in pictures.

I’m using instant dashi powder, but Vegan Japaneasy has 3 or 4 different recipes to make vegan dashi from scratch. On top of this classic miso base, Vegan Japaneasy also tells you to add dried mushrooms which give real depth of flavour, and leeks that melt down to buttery slivers. The glossary of ingredients in the back was super helpful, especially as included photos of the actual ingredients themselves.
